WHAT HAPPENS WHEN YOU THROW TOGETHER FRESH GREEN BASIL, BRIGHT RED TOMATOES AND BUFFALO MOZZARELLA CHEESE?

A CAPRESE SALAD!

It's so dang good, it will knock your guests right off their folded chairs. This is the perfect salad... light, simple, fresh and colorful. And it only has 3 ingredients, plus EVOO (extra virgin olive oil).

Honestly, this salad could not be easier to prepare whether you mix it all up in a bowl or create a swirl pattern around a plate or platter. It's classy, delicious and healthy.

The Caprese Salad (pronounced Kah-pree-zeh) is named after the Italian island of Capri. Its classic red, white and green symbolizes the Italian flag.

Since it has only 4 ingredients, including the virgin olive oil you've gotta spend the extra money and get the best ingredients. Every ingredient counts. So here are the 4 tips on how to make the best Caprese Salad, EVER!

FRESHLY PICKED BASIL

If you can, buy fresh picked basil from your Farmers Market or use what you've grown in your own indoor/outdoor herb garden. The fresher the basil the better the taste.

Basil is off the charts when it comes to Vitamin K, A and Manganese and it's known for being an anti-inflammatory and anti-bacterial. Don't be stingy with the basil, use as much as you want.

BUFFALO MOZZARELLA

Buffalo mozzarella also known as the 'white pearl of Italy' is made from the milk of buffalo, not cows or sheep. It's high in calcium and packed with protein. It's often sold in a container of liquid and you'll see soft white balls floating.

No worries if you can't find it, just use the next best thing regular mozzarella.

Again, the more expensive brands will taste better and don't get the low fat kind, it will defeat the point of this cheese, that is full cream and delicious!

FRESH CHERRY TOMATOES

Tomatoes are best when they are bright red and ripe as can be and eaten at room temperature, which means do not refrigerate them as many people do out of habit.

Again, the same rule applies: the more freshly picked the better the flavor. They're super high in Vitamin C with a healthy dose of minerals, vitamins and fiber.

EXTRA-VIRGIN OLIVE OIL

A Caprese is not a Caprese without extra virgin olive oil. That's all this salad needs with a sprinkle of sea salt. Don't be skimpy with the oil. Olive oil is the staple of the Mediterranean Diet. It's loaded with Omega 3, 6, 9, plus E & K. Eat it and enjoy it!

READY?

NOW THIS IS WHAT YOU DO.... 4 EASY STEPS:

1) Wash the cherry tomatoes and the basil, don't cut anything.

2) Drain the liquid from the Mozzarella Balls container.

3) Toss the tomatoes, basil and mozzarella balls in a cute bowl.

4) Drizzle with olive oil, sea salt and fresh ground pepper.

 OPTION: Skew the Mozzarella, Basil and Tomato and serve it as little hors d'oeuvres.

Bring to a party, share with your loved ones or give it to your friends, whatever you do, don't save it for another day. The basil will wilt, the tomatoes will get soggy and the mozzarella will get too hard.

Enjoy your Caprese with a glass of wine or lemon tea. On any day you can't go wrong with this delicious Mediterranean salad!
