I want you to feel good, so here are four meal ideas to help you stop the roller-coaster of the 'sugar highs' and 'sugar lows', so many of us experience throughout our busy day.
Start this week preparing a few of these very simple snacks and meals and start feeling rejuvenated, refreshed, more composed and just ready to take on a great day.

GREEN & BLUE SMOOTHIE
Toss 1c of fresh or frozen blueberries, 1/2ckefir or yogurt, 1/2c chopped baby kale, 1/4cmint leaves, 1/2 banana, 1Tbpumpkin seeds and 2 ice cubes into a high-speed blender. Add cold water to reach desired texture..... Single Serving
CHICKEN & GOAT CHEESE ON RYE
In a bowl, gently toss 1c arugula and basil, 1-2tsp olive oil, 1tsp lemon juice and a pinch of salt and pepper. Spread 1Tbgoat cheese on 2 slices of rye bread. Add some shredded chicken and top with 1c of greens. Single Serving
Mix combo well, combine with shredded romaine lettuce or place on 2 large romaine leaves and top with tomato slices, fold over and roll up. Serve with pita chips..... Serves 1-2
THAI TURKEY SALAD
In a large bowl add 2c of chopped spinach, 1 sliced red bell pepper, 1/2 (very small) head of thinly sliced red cabbage, 2oz snow peas, and toss. Stir 5 large fresh torn basil leaves, 2Tb chopped peanutsor almonds and a little grated ginger into already cooked 8oz ground turkey. Add to salad and toss.
Top with a few more peanuts or almonds and basil leaves. Drizzle with olive oil or a vinaigrette dressing of your choice..... Serves 2
